Palm sugar is speciality of An Giang province, Vietnam. Palm sugar is made from the sap of Palmyra (Borassus Flabellifer) tree. Khmer ethnic farmers climb to the top of Palmyra tree, cut its flowers and use containers to collect Palm flower sap. Sap is then cooked to make palm sugar. Palm sugar has low glycemic index (GI 35), which is considered a healthier sweetener. Also, palm sugar is a source of many essential minerals such as potassium, sodium, iron and so on.
